Aubergine and Chickpeas in tomato sauce – Moussaka’a

This is not moussaka’a as it is widely known, a ‘Greek dish with béchamel’.  As its name indicates this is a ‘cold’ dish. In Christian homes in Lebanon, Moussaka’a is a favourite during Lent.  As with all meat-free dishes, it can be served cold and eaten the following day. It is delicious scooped in Arabic bread. Good as a starter or as an accompaniment.
